В отеле Hotel de la Ville из коллекции Rocco Forte Hotels состоялось открытие первого в Вечном городе Café Ginori. Fulvio Pierangelini | It is hard to imagine Fulvio Pierangelini (Rome, 1953) as anything other than Italy’s top chef. Yet, as a young university student, he worked as a labourer, night porter and sailing instructor in seasonal resorts to pay for his studies. After graduating, he decided to indulge his passion for cooking, discovered when he slowly approached kitchens during the different types of work done. Discovering his innate talent, a fundamental learning experience was at Mougins, on the Côte d’Azur, under Roger Vergé, one of the brightest stars of French cuisine. In 1980, he took over ‘Il Gambero Rosso’, a modest trattoria on the harbour, an adventure that lasted around 30 years and took him to the top of the catering world, achieving important goals such as being named the best chef in Italy by the leading national and international gastronomic guides. His signature dish is still the famous ‘Passatina di ceci e gamberi’ (chickpea and prawn veloutée), giving a different view of haute cuisine, although he is equally well known for including more daily dishes in his menus – ‘Pasta al pomodoro’ (pasta with tomatoes) is guaranteed – bringing in new respect to individual ingredients, previously considered inappropriate. Fulvio Pierangelini is loved for his research and recipes, which focus on the essence and not on mathematical perfection. Chef Fulvio’s creative personality and his great charisma, combined with his expertise in ingredients, have led to his global success. For food critics, both at home and abroad, Fulvio loves spreading the message of great cuisine, his mission since 2009 in the role of Creative Director of Food for Rocco Forte Hotels’ bars and restaurants. Fulvio Pierangelini has designed the menus for the restaurants of Hotel Savoy, Hotel de Russie, Verdura Resort, Hotel de La Ville, Masseria Torre Maizza, Villa Igiea, Hotel Amigo in Brussels, Hotel de Rome in Berlin and the Charles in Monaco.
